Gluten Free Pancakes with Warm Blueberry Compote

     A piping hot stack of light and fluffy pancakes, with creamy butter melting through each golden layer, and topped with a tangy, sweet blueberry compote that oozes down the sides and seeps into every bite.

Blueberry Compote
     This glistening dark syrupy sauce is super easy to make. And it is okay if there are leftovers. It is good jarred in the fridge for quite a while. Then you have something to jazz up your yogurt, oatmeal, cinnamon rolls, vanilla ice cream, cheesecake, poundcake, get it...all the cakes. So many options.

  • 1 1/2 cups of fresh blueberrries
  • 1/2 cup of water
  • 2 tsp of cornstarch
  • 1/4 cup of sugar
  • zest of half a lemon
  • 1/2 tsp of cinnamon
     Completely dissolve the cornstarch into the water, stirring until there are no lumps. Put the cornstarch water and all the other ingredients into a sauce pan. Bring to a boil then reduce the heat to low. Stir occasionally. Break down the blueberries by mashing with a fork. Simmer 20 minutes or until the sauce is dark and thickened. Bask in the amazing blueberry fragrance that perfumes the air.

Dry Ingredients:

Wet Ingredients:
  • 2 eggs
  • 1 1/2 cups of milk
  • 2 Tbsp of melted butter
     Mix all the dry ingredients together in a large bowl. Whisk the wet ingredients in a separate bowl until frothy and completely combined. Pour the wet mixture into the dry mix. Stir well. Let the batter rest for a few minutes before using. 

     Get your non stick griddle or non stick pan hot. Scoop the batter out onto the griddle/pan. When the batter bubbles and develops little bubble pockets, flip the pancake and let it cook until browned on the other side.

    Serve immediately with pats of butter melting on top and the warm blueberry compote drizzled generously over it all.
